This is one of my favourite meal when I do not want anything very heavy ^-^ Easy & fast to whip up also, lazy me hahaha. Dear son saw me eating this and ask for a portion, he always loves pine nuts! Surprisingly he picked out the dried apricots! Thought he will like the sweet dried fruits!
Recipe adapted from Good Food MagazineIngredient (2 servings)
- 100gm quinoa
- 5 dried apricot, chopped
- 1/2 lemon juice & zest
- 1 tbsp olive oil
- Large handful parsley & mint, roughly chopped
- 25gm toasted pine nuts
- Cook quinoa accordingly to package, drained well.
- Place cooked quinoa in a mixing bowl. Add in lemon juice, zest, olive oil. Add salt & pepper to taste and mix well.
- Stir in apricots, pine nuts and herbs. Serve.
looks almost like a tabouleh :)
