Pindang Ikan

'I smell something sour, what are you cooking?' commented by hubby >.< As usual this fish broth does not entice him at all. I assure him that it is not fishy at all and he still did not even want to taste a sip of the broth...sigh so hard to please...Anyway me and my kids enjoy this fish broth especially in this cooling weather, so satisfying to have a bowl of hearty broth to warm up our tummies :D


Fish in Broth, Northern Style

Ingredient

  • 1 whole fish, approx 750gm (I used a 1/2 kg white snapper fish head)
  • 3 shallots, sliced
  • 2 cloves garlic, sliced,
  • 2 cm galangal, sliced
  • 2 cm ginger, sliced
  • 1 lemon grass, bruised
  • 2 slices assam gelugor
  • 1/4 tsp fenugreek
  • 1/2 tsp turmeric powder
  • 1/2 tsp salt
  • 1 tomato, sliced
  • 800-1000ml water

Method
  1. Clean and cut fish into pieces (if using a whole fish). Marinate with salt & turmeric powder.
  2. Place all ingredients, except fish and tomato, into a pot, bring to boil for 2 mins.
  3. Put in fish and tomato and simmer on medium heat until the fish is cooked. Add more salt if needed.
