淮山南瓜瑶柱汤

Finally back to our normal rountine >.< eat well sleep well....Last week my lil gal was admitted to hospital for 4 days for Grade B salmonella infection!! Imagine a tiny lil 2 year old had to gone through complex febrile fix , diarrhea (used up a full pack of 56 diaper in hospital)!! Luckily my hubby was around in town, if not I really don't know how to cope with one schooling son and a sick daughter. Great to see her eating well and running here and there happily everyday now!!! :D :D Time to plump her up again with nourishing soup everyday hehehe..

This soup is very sweet, no salt added!!


Recipe By Peng's Kitchen
Ingredient
  • 500gm fresh huai shan, peeled and cut into chunks
  • 500gm pumpkin, deseeded, peeled and cut into chunks
  • 1 sweet corn, sliced
  • 20gm YuZhu, 玉竹
  • 30gm dried scallops
  • 300gm pork ribs
  • 1 honey date
Method
  • Blanch pork ribs in boiling water for 1min. Drain away water.
  • Place all ingredient in a pot with 8 cups water. Bring to boil. Lower heat and simmer for 1.5 hrs.
