This is a real simple plain cold noodle dish to serve during hot and humid weather when you don't have much appetite! Quick to whip up as have I've a bottled of homemade white sesame paste sitting in the fridge. Not necessary to have side accompaniments, the nutty dressing of sesame paste and peanut paste with lots of freshly shredded cucumber are enough to make this a wonderful light meal to enjoy!

Ingredient (1 serving)
- 120gm dried noodle
- 50gm cucumber, shredded
- 1 clove garlic, finely minced (optional)
Sauce : mix well
- 2 tbsp white sesame paste
- 1/2 tsp peanut butter
- 1 tbsp sugar
- 1 tsp rice vinegar
- 2 tbsp cold water
Method
- Bring a saucepan of water to boil, drop in dried noodle and cook till al dente. Drain away water and toss in 1/2 tbsp sesame oil. Cool down completely and place the noodle onto a serving plate.
- Garnish with shredded cucumber and minced garlic. Drizzle sauce over noodle, toss evenly and serve immediately.
