I really like this batch of muffin, not too sweet & texture remains soft the next day without heating them up :)
Apricot & Almond Muffins
* 125gm self-raising flour
* 1/2 tsp baking powder
* 1 cup oatmeal
* 1/2 cup ground almond
* 1/2 cup dried apricot, finely chopped
* 3/4 cup milk
* 1/4 cup honey
* 60gm butter, melted
* 1 egg, lightly beaten
- Sift flour & baking into a large mixing bowl. Mix in oatmeal, ground almonds & apricots. Make a well in the centre.
- Whisk milk, honey, butter & egg together. Add to dry ingredients, mix till just combined.
- Spoon mixutre into muffins cups 2/3 full. Bake in preheated oven at 180 deg cel for 25mins or till golden brown.
