- 110gm unsalted butter
- 70gm sugar
- 3.5 tbsp honey
- 110gm cake flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 1/2 tsp vanilla essence
- 70gm cranberries (soak in warm water for 10mins to moisten, drain well before use)
- Place all ingredient (except cranberries) in a mixing bowl.
- Beat on high speed for 3 mins till mixture is light & fluffy.
- Scoop batter into cupcake cases. Bake in preheated oven at 180 deg cel for 25mins until golden brown.
