Base:
- 150g digestive biscuit crumbs
- 60g melted butter
- 2 x 250g Philadelphia Cream Cheese, softened
- 3/4 cup sugar
- 2 tbsp lemon juice
- 10g gelatine dissolved in 1/4 cup hot water, cooled
- 2 large mangoes, chopped
- 1 cup cream, lightly whipped
- 1 pkt crystal clear mango jelly (optional)
- Combine biscuits crumbs with butter and press into the base of a lined 22cm springform pan.
- Beat cream cheese until smooth, add sugar, lemon juice and gelatine mixture, beat until well combined. Fold in chopped mangoes and cream. Pour over the prepared base.
- Refridge for 1 hour. Pour melted and cooled jelly over the surface. Refridge until set.

What is the brand of crystal clear mango jelly that you put over your cheesecake? Am seeing if I can get it here in the US.
Hi Claire...the brand is Hollyfarm..i doubt u can find this brand in US. Actually is a mango flavour jelly, any brand is find :)

I like to check with you how you put the clear mango jelly on top of the cake? is it mixed the mango jelly powder with water and just add onto the cake? Will the mixture sink into the cake?
Hi Jennifer, thank u :) as stated in the recipe, I chilled the cheesecake in the fridge for it to set before spooning the cooled jelly on top of the cake, then put back to fridge n chill till set again. U need to boil the jelly powder, instruction shown on back of package :)
