Black Bean Soymilk

Ever since having this Joyoung soy maker, I've been making soy milk very frequently! Now there are loads of frozen soybean pulp sleeping in my freezer hahaha...Besides making the usual soybean milk, I've try out the blackbean version which my family loves it too! As blackbean has a slight bitter aftertaste, I mixed in some soybean so that the taste is more acceptable for the kids :) What to do with the blackbean pulp? Look out for the coming post on how to utilise them rather than discarding them into bins  ^o^








Ingredient
  • 70gm dried black beans
  • 30gm dried soy beans
  • 1L water

Method
  1. Rinse both beans thoroughly. 
  2. Place beans and water into soy maker. Select 'dry beans' and start the maker.
  3. The machine will beep when the milk is ready after 25mins. 
  4. Strain the milk into a clean jug. Stir in sugar to taste.

Bake-Along # 47 : Cinnamon-Sugar Doughnut Muffins


I'm not a fan of doughnuts as I find them overload with sugar and frosting especially those fanciful ones. hehehe So till now I've yet to attempt any fried doughnuts recipe! But I do not mind baked doughnut with minimal frosting which is  friendlier to my waistline ^.^  This cake like texture doughnut is so irresistible as I really like the cinnamon-sugar coating, can't help popping them into my mouth! ^.^




After baking it just looks like normal little muffins...see how it transforms after coating with cinnamon sugar!



with modifications
Ingredient (15 small muffins)
Muffins :
  • 180gm plain flour
  • 1/4 tsp baking soda
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 2 pinch of ground nutmeg
  • 1/4 tsp ground cinnamon
  • 100ml + 1/2 tbsp soy milk
  • 1 tbsp plain yoghurt
  • 60gm unsalted butter
  • 60gm sugar
  • 1 large egg
  • handful of raisins
For Coating :
  • 100gm butter, melted
  • 100gm sugar
  • 1/2 tbsp ground cinnamon

Method
  1. Combine flour, baking powder, baking soda, salt, nutmeg and cinnamon.
  2. Combine milk and yoghurt.
  3. With a electric whisk, cream butter and sugar until light. Add in egg and beat till combined.
  4. Sift the flour mixture over the creamed butter, alternate with the milk mixture, mixing just until smooth. Do not over mix.
  5. Scoop some batter into small muffin cups, place in 3-4 pieces of raisins, top with another small scoop of batter. 
  6. Bake in preheated oven at 180 deg cel for 15mins or until golden brown.
Coating :
  1. While the muffins bake, set up 2 bowls to dunk them in. In one bowl you will have the melted butter, and in the other bowl you will have the cinnamon sugar.
  2. Remove the muffins from the cups and cool slightly. Dunk them in the melted butter, then coat them with the cinnamon sugar. Ready to serve!


Some thing hidden in this little doughnut? Yes they are raisins!
