Rice with Cranberries & Pistachios

Flavorful basmati rice served with grilled chicken...

Ingredient
  • 400gm basmatic rice
  • 1 tbsp salt
  • 1 cinnamon stick
  • 4 cardamom pods
  • 3 cloves
  • 50gm butter
  • 75gm dried cranberrries
  • 75gm shelled pistachio nuts
  • salt to taste
  • 1 lemon zests
Method
  1. Was rice well, rinsing 3 to 4 times till water runs almost clear. Drain rice well.
  2. Fill a pot of 2.5 litres water and add salt, cinnamon, cardamom pods & cloves. Bring to boil then add rice.
  3. Cook for 5mins until rice is half-cooked. Drain away water.
  4. Melt butter in another pot, add cranberries, pistachio and 1/2 cooked rice. Add salt to taste. Stir until thoroughly mixed. Reduce heat to low, cover and cook for another 10-15mins until rice is tender. Fluff rice before serving.
Grilled Chicken
Ingredient (2 servings)
  • 2 boneless chicken thighs with skin on
  • 1 tbsp olive oil
  • 4 tbsp Worcestershire sauce
  • 1 tsp black pepper
  • 1 tbsp brown sugar
Method
  1. Marinate chicken thighs with all seasonings and cling wrap. Best chill overnight.
  2. Heat 1 tbsp olive oil in a non-stick pan, place marinated chicken, with skin side down, pan-fry till brown for 5mins, turn over and cook the other side till cook through.

Blueberry Yoghurt Muffins




Ingredient
(A)
  • 300gm plain yoghurt (I use 2 small tub Marigolds Brand)
  • 120gm unsalted butter, melted
  • 1/4 tsp salt (omit this if using salted butter)
  • 3 large eggs, lightly beaten
  • 1 1/2 tsp vanilla essence
(B)
  • 275gm cake flour
  • 150gm sugar
  • 1 1/2 tsp baking powder
  • 1/4 heap tsp baking soda
(C)
  • 125gm frozen/fresh blueberries (toss with 1 tbsp of the flour )
  • 1 lemon zest
Method
  1. Combine (A) together and mix evenly.
  2. Sift (B) into another bowl. Make a well in the centre of the bowl.
  3. Pour (1) into the well. Fold in flour till combined. Stir in blueberries & lemon zests. Do not overmix.
  4. Scoop batter into lined muffin cups. Bake in preheated oven at 200 deg cel for 20mins or until golden brown.
