One Dish Meal #2 : Braised Yee Fu Noodles

I've been wanting to cook this dish for quite some time, but could not locate any stalls selling yellow chives near my place! One fine day while browsing at cold storage and saw bunches of fresh yellow chives! :) So continue with my groceries shopping for dried noodle, baby corns and button mushroom :)







Ingredient
  • 300gm Yee Fu noodles
  • 200gm yellow chives
  • 200gm sliced button mushrooms
  • 200gm sliced baby corns
  • 5 cloves garlic, chopped
  • 3 tbsp oil
Sauce (mix together)
  • 3 tbsp oyster sauce
  • 4 tsp soy sauce
  • 1/2 tsp salt
  • 2 tsp sugar
  • 1 tsp sesame oil
  • 1/2 tsp pepper
  • 2.5 cups stock

Method
  1. Heat oil in wok, sauté garlic until fragrant. Add in mushroom and baby corn and stir fry for 2mins.
  2. Toss in yellow chives and stir fry for 1 min. Dish up.
  3. In the same wok, add in sauce mixture and bring to boil. Add in Yee Fu noodle and simmer till noodle is softened and absorbed the sauce.
  4. Return the yellow chive, mushroom & baby corn into the wok and toss evenly with the noodles. Ready to serve.


One Dish Meal #1 : Simple Fried Mee Hoon

I like to prepare 1 dish meal when I'm feeling lazy and tired to churn out 2 dish + soup for every meal, twice a day!! When my hubby not back for meal, worst...at times dunno what to prepare for the 2 kids and myself. So 1 dish meal is a savior for me!! ;)

Ingredient
  • 200gm dried vermicelli, Mee Hoon (soaked in water to soften, and drain well)
  • 6 cloves garlic, minced
  • 8 shallot, finely sliced
  • 1 medium carrot, shredded
  • 300gm shredded Beijing cabbage
  • 12 fresh shitake mushroom, thinly sliced
  • 250ml fish stock
  • 3 tbsp vegetarian oyster sauce
  • 2 tbsp light soy sauce
  • 1/2 tsp white pepper
  • 2 tsp sesame oil
Garnish : red chilli, spring onion, fried crispy shallots & lime juice


Method
  1. Heat 4 tbsp oil in wok, add garlic & shallots and fry for 2 mins until fragrant.
  2. Add in carrots and stir fry for a min.
  3. Add in mushroom and mix evenly.
  4. Toss in shredded cabbage and fry for 3mins.
  5. Add in softened mee hoon and mix evenly. For easier tossing, use a wok spade and a chopstick.
  6. Add in stock and seasoning and continue to stir fry on medium high fire until the liquid is absorbed by the mee hoon. Adjust seasoning accordingly by adding more oyster sauce or soy sauce. (as my kids are also eating this mee hoon so the seasoning indicate above is just nice for us, not overly salty or bland).


Mummy's portion : I like mine with lots of chilli, fried shallots & squeeze of lime juice!
