Steam Spicy Prawn

Ingredient
  • 300gm large prawns
  • 1 red chilli
  • 6 cloves garlic
  • 1 tbsp chinese wine
  • 1/2 tbsp light soya sauce
  • 1/2 tbsp sesame oil
  • 1/4 tsp salt
  • dash of black pepper
Method
  1. Finely chop chilli & garlic together. Add in wine, soya sauce, sesame oil & salt and mix evenly.
  2. Place prawn in a plate, spread garlic mixture over the prawn. Steam over boiling water for 6 mins till cook. Serve.

萝卜泡菜

Crunchy and sour!! A great snack to tantalize my bland taste buds :)

Ingredient
  • 1 small radish
  • 1 small carrot
  • 1 cucumber
  • 2 tbsp salt
  • 3 tbsp sugar
  • 1/2 cup apple cider vinegar
Method
  1. Peel radish & carrot. Slice into cube.
  2. Wash cucumber cleanly. Remove the seeds & cut into cubes.
  3. Place all vege into a mixing bowl. Add in salt & mix evenly. Set aside for 20mins. Strain & remove water thoroughly.
  4. Mix vinegar & sugar evenly. Add in (3) and stand in room temperature for 6 hours covered.
  5. Transfer pickles into air-tight container and chill in fridge.

Tomato & Cheese Cupcakes

My last bake was almost 2 mths ago!! Finally reaching my 2nd trimester and morning sickness is almost subsiding...hopefully :) yes I'm expecting #2!!! Past few months had been 'torturing' by the morning sickness therefore no energy to bake at all. Yesterday morning manage to bake some simple cupcakes for my boy to bring to school and to satisfy my hungry pangs at times :P.


Ingredient
  • 100gm unsalted butter
  • 80gm sugar
  • 2 eggs
  • 100gm self-raising flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 100gm chopped tomatoes (after peeling & deseeded)
  • 2 slices cheddar cheese, chopped
  • 2 tbsp parmesan cheese
Method
  1. Combine butter, sugar, eggs, flour, baking soda and salt in mixing bowl. Beat on high speed for 3 mins until smooth and pale.
  2. Fold in chopped tomatoes & cheddar cheese.
  3. Spoon batter into muffin cups.Sprinkle some parmesan cheese over the surface.
  4. Baked in preheated oven at 180 deg cel for 25-30mins until golden brown.
