- 300gm chicken drumlets
- 1 tbsp hua diao jiu
- 1/2 tsp salt
- 2 dried chilli, softened and cut into sections
- 200ml water
- 50ml light soy sauce
- 2 tbsp rice wine
- 2 tbsp sugar
- 1 tbsp grated ginger
- Marinate chicken drumlets with hua diao jiu & salt for 30mins.
- Deep fry drumlets till golden brown.
- Bring sauce ingredients to boil. Add drumlets and braised till sauce reduced & thickens.

Can use chilli padi instead ?
Angie Fan....dried chilli imparts a smokey flavors which fresh chilli could not be attribute. Maybe u can add a couple of chili padi for more intense heat.
