Mixed Berry Cheesecake Brownie



Happy 8th Birthday to my second born! A simple non-baked mixed berry cheesecake with a moist brownie as the base. Really love the chocolatey brownie and tangy creamy berry cheesecake combination. Only flaw is that I find the cream cheese layer a little too short as I've used a 8" square pan....should have used a 7" pan instead. ^0^ 



Ingredient (7" square pan)
Brownie Layer
  • 75gm dark chocolate
  • 75gm unsalted butter
  • 2 eggs
  • 120gm sugar
  • 1/2 tsp vanilla extract
  • pinch of salt
  • 100gm plain flour
  • 110gm semi sweet chocolate chips
Mixed Berry Cream Cheese Layer
  • 1 tbsp gelatin powder
  • 2 tbsp water
  • 250gm cream cheese, room temperature
  • 100gm fine sugar
  • 200gm mixed berry compote*
  • 200ml dairy whipping cream
Mixed berry compote : Place 200gm frozen mixed berries, 50gm fine sugar into a saucepan. Bring to a boil. Reduce heat and simmer for about 10 mins until thickens, stirring occasionally. Stir in 1 tbsp lemon juice and 1 lemon zest. Remove from heat and set aside to cool before use.

Method

  1. Dissolve dark chocolate and butter over a pot of simmering water. Cool.
  2. Whisk eggs, sugar, salt and vanilla till well combine. Stir in butter mixture.
  3. Sift flour and baking soda over and fold till well incorporated. 
  4. Pour batter into a lined 7" square pan and spread out evenly. Bake in preheated oven at 180 deg cel for 25mins. Cool in pan.
  5. Prepare cream cheese layer : In a mixing bowl, whip the dairy cream until soft peak. Set aside in fridge.
  6. Mix gelatine with 2 tbsp water. Set aside to allow the mixture to swell before setting the bowl over a pot of simmering hot water. Stir the mixture once the gelatine melts, remove from heated pot and cool slightly before used.
  7. In another clean mixing bowl, beat cream cheese until smooth. Beat in sugar until well dissolved. Stir in gelatine mixture and mixed berry compote.
  8. Fold whipped cream into the cream cheese mixture with a spatula. Pour the cream cheese mixture on the cooled brownie base. Smooth the surface and chilled until set.

Potato Cheese Pizza

This is a creative way I've discovered in a book of preparing pizza. Instead of using bread based, layers of golden panfried potatoes is used. I utilised whatever I have in the fridge, ham & shimeiji mushroom as the fillings instead of following the exact ingredients indicated in the recipe book :) You too can used any fillings you prefer :) 


Kid's Platter ^0^ 



Arrange cooked potatoes to form base, top with shredded cheese followed by fillings. Finished with another layer of potatoes and cheese, grilled till golden brown.

Ingredient
  • 2 Russet potatoes, thinly sliced
  • 1 small onion, thinly sliced
  • 3 slices honey ham, diced
  • 1 cup shimeiji mushroom
  • 1/2 cup pineapple cubes
  • salt & pepper to taste
  • shredded mozzeralla cheese

Method
  1. Heat olive oil in a non-stick pan. Pan fry sliced potatoes, in batches, until golden brown on both sides. Remove from heat and set aside.
  2. Using the same pan, sauté onion until golden brown.
  3. Add in shimeiji mushroom and stir fry for 2 mins until soften. Add salt & pepper to taste.
  4. Toss in ham and stir evenly. Remove from heat.
  5. On a lined baking sheet, arrange a layer of cooked potatoes to form a base. Sprinkle some mozzarella over. Top with some mushroom and ham mixture and pineapple cubes over the cheese.
  6. Arrange another layer of cooked potatoes over the filling, press down lightly to flatten the pizza. Sprinkle some mozzarella over.
  7. Turn on top heat of the oven and grill for 10 mins till cheese melted and golden brown.

Homemade Chicken Nuggets II

This is another popular kiddy's food, chicken nuggets. They just don't get sick of eating this everyday! It is always so convenient to pick up a pack of frozen nuggets from the supermarkets. But do you notice the list ingredients indicated on the package? Other than the chicken meat, it usually contains some unusual ingredients like flavours enhancer? emulsifiers? chicken fats?! colourings? and the list goes on.....With homemade ones (healthier option) you know exactly what are the stuffs you are adding into the nuggets and it is really easy and quick to make it your kitchen! Compare to the previous homemade chicken nuggets I've tried, this current one is straight forward, just use chunks of fresh chicken breast and coat with seasoned mayonnaise and biscuits crumbs and you are ready to send them into the oven!


Only require simple seasoning : mayonnaise, garlic & herbs blends, salt & pepper, crushed wheat crackers and of course fresh chicken breast chunks! Be creative and create your own concoction of seasoning by adding parmesan cheese, chilli flakes, varieties of dried herbs etc.


Crisp and golden brown homemade chicken nuggets

Nothing else just real chunks of chicken meat! ^0^

Ingredient
  • 400gm skinless chicken breast, cut into chunks
  • 1/2 cup mayonnaise
  • 2 tbsp milk
  • 1 tsp Mc Cormick garlic & herbs mix
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup crushed wheat crackers
  • adequate butter

Method
  1. Combine mayo, milk, garlic & herbs mix, salt & pepper. Stir well.
  2. Toss in chicken chunks and coat each pieces evenly with mayo mixture.
  3. Gently scoop the mayo coated chicken pieces onto a plate of crushed cream crackers. Toss gently to coat the chicken with crushed crackers. Press down firmly to adhere well. 
  4. Lightly lift the chicken pieces onto a lined baking sheet. Place a small thin slice of butter over each chicken pieces.
  5. Bake in preheated oven at 200 deg cel for 10-12 mins on each side till golden brown and crisp.

Rainbow Pasta



Oooooo I just can't enough of rainbow food ;) Yah I know some of you may detest the use of food coloring, but I usually don't rarely serve food that are loaded with colourings to my kids. Just trying out this recipe for fun....Hahaha this maybe the first and last time I make this colored pasta ;) It is really simple and fun to make this rainbow pasta! Just need to get ready a pack of pasta (I've used linguine), Wilton food colouring paste, some toothpicks and 6 medium ziplog bags and start cooking the pasta in a pot of boiling water.




Ingredient
  • One 500gm package of pasta of your choice (I've used linguine)
  • Wilton food colourings paste 
  • 6 ziplog bags 

Method
  1. Bring a pot of water to boil. Add 1 tsp salt. Cook pasta till al dente. Drain away water and rinse with cold water. Drain well.
  2. Place 2 tbsp hot water into each ziplog bag. Use a toothpick and swab in some food colourings. Mix well with the water. Need not use a lot of colouring, one tiny bit is vibrant enough. 
  3. Add in 1 cup cooked pasta into each bag. Seal the bag and toss the pasta to blend with the colourings. Rest the mixture for 10 mins.
  4. Remove pasta and rinse with cold water individually till water runs clear. Toss the colored pasta with some olive oil to prevent them sticking together. Best use for making cold Pasta Salad. Serve it immediately after mixing it with your favourite salad dressing.

Tadah!! My kids so happy to see this! hahaha Only made a serving but they happily shared it and finished up everything :) All edible ingredients including rainbow pasta, tomato (sun), cheese (sun), bread (clouds), omelette (birds), broccoli (trees), carrots (flowers), corn kernels, teriyaki chicken.

Woohoo weekend is coming again!! Hopefully I've some time to test on new recipes and updating my blog. Nowadays it is difficult on weekdays just to sit in front of the computer to do my 'work', so occupy with just 2 schooling kids! Now I'm just trying to steal some time when they taking nap while I clearing some housechores....yawn......

Another school week has passed ! Hopefully will have more interesting food ideas churning out for my kids meal for the coming weeks!! But alas who knows....me caught the chicken pox virus!!!! no more fanciful snack box as Mummy need more rest for the next 2-3 weeks :(....

Pack with Love 5

What have I been busy with since my boy started primary and 2nd one attending playgroup? I'm busy fetching them to and fro to school and preparing breakfast and lunch for dear son to bring to school >.<. I'm so occupied with the kids that I'm so tired that do not have the energy or mood to do any bakes for the past weeks @.@ 

With 600 kids in each break session, they have to queue and finish their food in 30mins duration!! I think this is rather intimidating for him as after the first day experienced in queuing for food, he requested for packed food thereafter >.< So every morning he will bring his snack box to school with him and during lunch break I will bring the food to him as his school is only less than 10mins walk from home :D So now every end of the week I will have to plan a menu for his breakfast and lunch, of course his little sister will also has her share but in smaller portion.
