Pizza Dough & Homemade Tomato Sauce

Handmade Pizza Dough with homemade roasted tomato sauce, top with mozzarella & edam cheese, onions, bell pepper, mushroom & ham

Ingredient
(recipe modifed to make 2 pc 28cm thin crust pizza)
  • 200ml lukewarm water
  • 2 tsp instant yeast
  • 1 tbsp extra virgin olive oil
  • 1/2 tbsp sugar
  • 1 tsp salt
  • 32ogm bread flour

Method

  1. Sprinkle sugar & yeast over water. Set aside for about 10mins till frothy.
  2. Sift flour into a mixing bowl. Stir in salt. Make a well in the centre.
  3. Pour yeast mixture and oil into the well.
  4. Knead dough till smooth and springy for about 5mins.
  5. Place the ball of dough in a large flour-dusted bowl. Cover with cling wrap. Proof for about 1 hr till double in size.
  6. Knock back dough and knead lightly. At this point of time can wrap the dough and chill the dough in fridge till use. Or
  7. On a lightly floured surface, roll out dough and place on a greased baking pan, pierced surface with a fork, spread with tomato sauce (see below for recipe), cheese & your favourite toppings and bake at 220 deg cel for 20-25 mins till the crust is brown and the cheese is bubbly.





Roasted Tomato Sauce
Ingredient
  • 1kg ripen tomatoes, halves
  • 2 spring rosemary
  • 4 cloves garlic, thinly sliced
  • 4 tbsp olive oil
  • 1 tsp sugar
Method
  1. Place tomatoes cut side up in a oven proof dish. Drizzle olive oil evenly over the tomatoes.
  2. Place rosemary leaves & garlic randomly over. Sprinkle sugar.
  3. Bake in preheated oven at 200 deg cel for 1hr. Cool.
  4. Remove rosemary stalk and process in blender till smooth.
  5. Chill in fridge for 2 wks or freeze for 1 month.

If no time to knead & proof dough..try this!! I think this instant pizza crust mix is the best, just add water and stir to form dough! no need to rest nor proof yet taste better than any other frozen pizza base! :D

Hi Peng,
I love each and every post of yours, and of course this one too, as pizza is my favorite. I've got some questions about making a pizza like yours, can you please help me out:

1. Can a bread maker be used for this recipe? If I can use a bread maker, then I don't have to sprinkle yeast over water first, right? Because it's instant yeast, right?

2. Can canola oil be used in place of olive oil? Or olive oil is a must for pizza dough? I'm sorry that this question seems ridiculous, just because I have never made pizza before, and right now I don't have extra virgin olive oil on hands.

3. Can i use store-bought canned tomato sauce too? And did you use canned mushrooms or fresh ones?

4. Can you please tell me the order that you put the toppings on your pizza? Does it go like this: tomato sauce, ham/salami/mushroom/bell pepper etc. then finally cheese? I mean, is it necessary that tomato sauce always comes first and cheese comes last?

I'm sorry for too many questions. I'm completely blank in pizza making, so I have a thousand of questions. Please don't get mad at me :).

RPVN, that is a very very qn! hope i can answer all of them :P

1) I dun own a bread maker so am sure the operating functions! This dough is simple to handle, no sticky to hands and does not require to knead very long, why not try hands on if u are interested? :D

2) Can use canola oil, but olive oil gives a unique flavours to the dough

3) Canned tomato sauce can be used. You can try pasta sauce also! fresh mushroom or canned one is workable, both I've tried b4. Just that I've a canned in my pantry so I used that :D

4)Spead tomato sauce first, follow my cheese then toppings. Tomato sauce must be first so that the pizza base will be moist not dry after baking. Presentation wise looks better with toppings on top of cheese :D

Hi Peng,
Thank you so much. It's so kind and generous of you to answer all my questions. I should go buy olive oil and mushrooms now, your pizza looks so tasty and I would love to bake one like that too :). I think I can make pizza dough then put in the freezer, then when I want a pizza, I just take it out, let it defrost, roll it flat then add toppings and bake, don't you think that's OK? I think it'd be really convenient if I can do it like that. You wrote that we can chill the dough in the fridge, but it'll last longer if we keep it in the freezer, right? By the way, the baking time should be 20-25 minutes, right? It seemed you wrote 250 minutes :).

Hi RPVN..hehehe i actually made the dough b4 one day and chill in fridge. Still got 1 portion left in fridge :D Yes, u can freeze it but make sure u wrap it will to prevent it from drying out. oops :D amended already.

Great idea to include Edam cheese. Will try it the next round coz tonight we had pizza and there are my kids fav!
