山形糙米面包

最近比较忙。。。。忙着做面包!(^_^) 蛋糕天天吃我会腻,可是面包早,午,晚我可以把它当一餐!所以一个土司最多两三天内会被我们吃光光 (-_-) 










Brown Rice Bread
Ingredient (20cm x 11cm loaf)
  • 50gm brown rice
  • 300gm bread flour
  • 7gm instant yeast
  • 14gm sugar
  • 5gm salt
  • 21gm milk powder
  • 200gm water (u might not use it all)
  • 35gm butter

Method
  1. Place brown rice in a single layer on a baking tray. Bake in preheated oven at 160 deg cel for 30mins. Cool completely. Grind till fine in powder form. (pic above)
  2. Combine the brown rice powder, bread flour, yeast, sugar, salt & milk powder evenly in a mixing bowl.
  3. Add in water and mix till a rough dough is formed.
  4. Add in softened butter and knead for about 10mins till a smooth and elastic dough is formed.
  5. Smoothen the dough and cover, proof for 60mins until double in bulk.
  6. Punch down dough to release air, divide dough in 2 even portions. Knead lightly and shape into round, rest for 10mins.
  7. Lightly flatten each dough and fold both ends to the middle. Shape into round and seal the edges tightly. Place the dough into loaf pan and proof till it rises 1 cm above the edge of the pan.
  8. Bake in preheated oven at 200 deg cel for 35mins until golden brown.
  9. Remove bread from pan immediately and cool completely on rack before slicing.







Homemade Garlic Butter Paste
Ingredient
  • 100gm unsalted butter, softened
  • 30gm garlic, finely minced
  • 1 tsp dried parsley
  • 1/4 tsp salt
  • dash of paprika powder

Method
  1. Combine butter, garlic, parsley and salt until evenly mixed
  2. Spread mixture evenly over thick slice of bread.
  3. Sprinkle paprika powder over.
  4. Grill using top & bottom heat for 6 mins until golden brown and crisp.
