Weight Lost & A Cake

Hmmmm.....you must be wondering what is that bottle of vanilla shake mix appearing in the picture?? ^-* To make into beverage to go along with this wholesome yummy cake?? Actually no!! I've replaced the plain flour with same amount of the vanilla shake mix!! :D

I've been taking this food replacement shake twice a day for nearly 3 months, as at to-date I've have shed away 6.9KG!!! amazing isn't it!! I'm so happy with the results, finally back to my slender figure hehehe, despite still baking and cooking yummy food as usual :P But I still need to shed another 900gm which is still very stubborn to go away....hopefully another 2 weeks time I can reach my target weight of 50kg hehehe....

White Chocolate & Macadamia Cake

Ingredient
  • 60gm self-raising flour
  • 60gm plain flour (I substitue with same amt of Vanilla Shake Mix)
  • 1/4 tsp baking soda
  • 100gm unsalted butter
  • 100gm white chocolate, chopped
  • 70ml hot water
  • 50ml milk
  • 80gm sugar
  • 2 eggs, lightly beaten
  • 40gm macadamia nuts, chopped
  • dessicated coconuts for coating (optional, can use flour)
Method
  1. Sift flour and baking soda in a mixing bowl.
  2. Melt butter, chocolate,, hot water & milk over a low heat until chocolate is fully dissolved. Cool down slightly.
  3. Stir in sugar & egg until well blended.
  4. Fold in the egg mixture into the flour mixture and add in chopped nuts.
  5. Pour batter into a prepared pan (if using a bundt/unremovable pan, grease the pan and dust lightly with dessicated coconut or flour) and bake in preheated oven at 160 deg cel for 30-35mins until a skewer inserted comes out clean. Rest for 10mins before unmoulding.

  1. peng, i can imagine how nice is this vanilla, macadamia and white chocolate all comes together! Congrats on your weight lost, it's really a lot 6.9kg! another 900gms...haha! you are so accurate..so probably end of this month you will achieve your target weight !
