Stir-Fry Chicken Wings with Broccoli & Cauliflower

This one dish meal with meat & vegetables is good enough just for me and 2 kids when my hubby is not at home! My kids will usually finished up the broccoli and cauliflower if I cooked it tender enough :D My cute lil gal kept asking for more carrots cos it was cut into flower shapes!! 




Ingredient
  • 10 chicken mid wings
  • 5 shallots, chopped
  • 4 cloves garlic, chopped
  • 2 cm fresh ginger, shredded
  • 2 tbsp chinese wine
  • 50gm carrots, sliced
  • 200gm cauliflower florets
  • 150gm broccoli florets
Marinate : 
  • 2 tbsp fresh ginger juice
  • 1/2 tbsp minced garlic
  • 2 tbsp light soy sauce
  • 1/2 tsp salt
Seasoning :
  • 1/4 tsp pepper
  • 1/2 tsp sugar
  • 1/2 tsp chicken stock powder
  • 2 tbsp oyster sauce

Method
  1. Season chicken mid wings marinate for 20mins. Pan fry in hot oil on both sides until golden brown.
  2. Blanch carrots, cauliflower and broccoli in boiling water for 2 mins. Drain well.
  3. Heat 1 tbsp oil in wok. Add shallots, garlic and ginger until fragrant.
  4. Add in chicken mid wings, vegetables and seasoning and toss well for 2 mins until heat through. Drizzle over wine. Serve hot.
