Thursday Lunch

Yesterday my son went for excursion at a local hydroponic farm and came home with 2 packs of spinach complimentary from the farm :D So kind of him when he mentioned to give a pack to his grandma, but I explained to him these greens cannot be kept too long as we only visit my inlaws over the weekends :D

As these spinach is not as tender as those baby spinach, so I thought of making it a more soupy dish instead of just stir frying with garlic.

Spinach with Crabstick & Wolfberries
Ingredient
  • 350gm trimmed spinach
  • 3 cloves garlic, chopped
  • 3 crabstick, shredded
  • 2 egg whites, lightly beaten
  • 1 tbsp wolfberries, rinsed
  • 1 cup fish stock
  • 1 tbsp light soy sauce
  • 1/2 tsp pepper
  • 1 tsp sesame oil
Method
  1. Heat 1 tbsp oil in wok, saute garlic until fragrant. Add in spinach and stir fry for 2 mins until slightly soften.
  2. Add in wolfberries, fish stock & seasoning and simmer for another 3mins.
  3. Stir in shredded crabstick and egg whites and mix evenly. Serve immediately.

Omelette with Minced Pork
Ingredient

(A)
  • 3 large eggs
  • 1 tsp corn flour
  • 1/2 tsp light soy sauce
  • 1/2 tsp pepper
(B)
  • 60gm minced pork
  • 30gm yellow pepper, diced
  • 30gm red pepper, diced
  • 2 fresh shitake mushroom, diced
  • 20gm onion, diced
  • 3 cloves garlic, chopped
  • 3 tbsp water
  • 1 tbsp chinese wine
  • 1/2 tbsp oyster sauce
  • 1/2 tbsp light soy sauce
  • 1/2 tsp sugar
  • cornstarch water
Method
  1. Combine ingredient A and mix well. Pan fry egg mixture over low heat until golden brown on both sides. Set aside.
  2. Heat up 1 tbsp oil in a pan, saute garlic & onion until fragrant. Add in minced pork and stir fry for 2mins. Use the spatula to break up the minced.
  3. Add in peppers and mushroom and seasoning, stir fry for another 1 min. Stir in cornstarch water to thicken. Dish out and place on omelette.

This is the kids and my lunch today :D Serve the dishes with brown rice and simple sweet corn fish soup.
