Classic Embutido (Filipino-Style Meatloaf)

I was browsing through quite a numbers of  Philippines  cuisine as I'm trying to attempt some dish for this month Asian Food Fest : Philippines . I do not want to risk cooking weird dishes which my kids will reject hahaha....This filipino style meatloaf I'm definitely sure they will love it as there were eggs and sausage encased inside it! ^0^ Indeed this dish was a hit! My girl couldn't get enough of the eggs version one whereas my boy loved the sausage one :D

I managed to find these condiments, Pimientos & Sweet Relish at cold storage supermarket

Mix the ground pork with all the ingredients and seasonings into a sticky paste

Place in hardboiled egg and sausages and rolled them up into cylinder shape before steaming

This is the broth that oozed out after steaming the meatloaf. Do not discard it! I drenched this over my kid's rice :)

After cooling down the meatloaf, panfried lightly in oil till golden brown, slice and serve with tomato ketchup!

Ingredient
  • 500gm ground pork
  • 1 egg, lightly beaten
  • 1.5 tbsp Worcestershire sauce
  • 1/2 cup dry bread crumbs
  • 1/2 cup raisins
  • 4 tbsp chopped carrots
  • 1 4oz jar of Pimientos, diced
  • 4 tbsp sweet Pickle Relish
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 hardboiled eggs
  • 3 'extra lean' sausages

Method
  1. Combine ground pork and all seasonings and mix thoroughly into a sticky paste.
  2. Divide meat mixture into 3 equal portions.  Take a portion and lay on top of a  piece of parchment paper. Spread it out evenly and place 2 hardboiled eggs (or sausages) in the centre. With the help of the parchment paper, roll it up to encase the fillings. Press down firmly as you roll in into a log. Seal the parchment tightly by twisting the edge of the log.
  3. Steam the meal roll in preheated steamer over medium high heat for 30mins. Cool down completely before unsealing.
  4. Drain the broth into bowl (do not discard it, drench over rice and serve!)
  5. Heat some oil in a pan, sear the meatloaf in hot oil until golden brown. Remove from pan and slice. Serve with tomato ketchup.
