Herby Apricot Quinoa

This is one of my favourite meal when I do not want anything very heavy ^-^ Easy & fast to whip up also, lazy me hahaha. Dear son saw me eating this and ask for a portion, he always loves pine nuts! Surprisingly he picked out the dried apricots! Thought he will like the sweet dried fruits!





Recipe adapted from Good Food Magazine
Ingredient (2 servings)
  • 100gm quinoa
  • 5 dried apricot, chopped
  • 1/2 lemon juice & zest
  • 1 tbsp olive oil
  • Large handful parsley & mint, roughly chopped
  • 25gm toasted pine nuts

Method
  1. Cook quinoa accordingly to package, drained well.
  2. Place cooked quinoa in a mixing bowl. Add in lemon juice, zest, olive oil. Add salt & pepper to taste and mix well.
  3. Stir in apricots, pine nuts and herbs. Serve.
