Yam & Pork Croquettes

mould into cylinder shape..

coat with flour, egg & breadcrumbs, ready to pan-fry....
  • 300gm yam, steamed & mashed
  • 100gm minced pork
  • 60gm carrot, grated
  • 1 tsp minced garlic
  • 2 stalk spring onion, chopped
  • 1 tsp salt
  • 1/2 tsp pepper
for coating :
  • 1 egg, lightly beaten
  • some plain flour
  • some breadcrumbs
  1. Mix all ingredients together evenly.
  2. Lightly grease hand, shape yam mixture into small cylinder shape.
  3. Coat yam croquettes with flour, then dip in egg and finally coat with breadcrumbs.
  4. Heat some oil in pan, pan-fry yam croquettes at medium low heat until golden brown. Remove from fire and drain well on kitchen paper.
