Non-Baked Oreo Cheesecake




Ingredients

Base...
  • 120g digestive biscuits, chopped into fine crumbs (placed in ziplog bag & crush with roller pin)
  • 50g melted butter
Filling...
  • 300ml whipping cream (I used Bulla Thickened Cream)
  • 1 tablespoon gelatin powder
  • 3 tablespoon boiling water
  • 10ml lemon juice
  • 250g cream cheese, soften at room temperature
  • 50g icing sugar, sifted
  • 45ml fresh milk
  • 1 tbsp rum (I used 2 tsp rum flavourings)
  • 10 pieces of oreo cookies (cream removed & coarsely chopped)(1 piece refers to half of the oreo cookies)
  • extra finely chopped oreo cookies for decorating
Method
  • Mix biscuit crumbs & melted butter together and press firmly with the help of a spoon onto the base of a 7" loosebased cake tin. Chill for 30 minutes.
  • Beat whipping cream with electric mixer on low speed until 70% stiff or until mousse-like. Do not over beat. Keep in the fridge.
  • Place gelatin powder, lemon juice & boiling water in a bowl. Heat a pot filled with water until just simmering and place the bowl inside the pot. Dissolve gelatin, lemon juice & boiling water in the bowl. Keep warm.
  • With an electric mixer, beat cream cheese, icing sugar, milk and rum essence until smooth & creamy. Blend in gelatin solution. Fold in whipping cream with a spatula.
  • Pour half of the cheese mixture into the cake pan. Spread evenly. Chill for 15mins. With balance cheese mixture in mixing bowl, stir in coarsely chopped oreo cookies. Mix well. Pour the mixture over the plain cheese layer. Chill till set.
  • Remove from pan and decorate with finely chopped oreo cookies.

Yours look delish, better don't show my kids before I bought the cheese or else they will pester me to no ends.

Hi, tried this recipe...taste excellent.
However, I had made 2 mistakes..1st is the biscuit base is not compressed properly thus alot of loose biscuits bites falling apart and 2nd the cream cheese is not firmed. For the 1st mistake, I probably needs to press hard or add more butter. For the 2nd mistake, wonder your cheese cake turns out firm?

hi...no need add more butter if not the base will be too oily. Just spread the biscuit evenly and press hard down. Base of the recipe my cheese cake texture is ok, not soft nor too hard, just nice.

Hi peng, thanks for the respond. Instead of using bulla thicken cream, I used ph non diary cream, sane 300ml. Is this the reason that my cream cheese is not firm fir a cheesecake? Thanks

hi...non diary cream yield a lighter & fluffier volume, you may wish to increase another tbsp of gelatine to firm the cheese cake.

Hi, peng. I love yr blog and try this cake for my boy's birthday. They love it so so much! But my base came out quite hard and it's difficult to cut through, may i ask why?

Sun Sun...thanks for dropping by my blog. Glad to hear that your son loves this cakes! :) it s normal that the cookie crust is hard as the butter will solidify when chill. If you prefer a more crumbly base, you can try reduce the amount of butter to 40gm, but it may not bind the cookies well.

Anonymous 24 May...is indicated on the recipe digestive biscuits? if not you can try oreo cookies, removing the cream before weighing for the indicated qty.
