Why is it called '三杯鸡 ' Three Cup Chicken? In olden days, to cook this dish, 1 cup of oil, 1 cup of soy sauce & 1 cup of wine is added therefore the name of dish! Maybe they cooked a big wok of chicken that's why used so much seasoning hahaha...
- 1 chicken, chopped
- 1 tbsp corn oil
- 2 tbsp sesame oil
- 5 cm ginger, sliced
- 1/2 cup chinese wine
- 1 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 50gm sweet basil leaves
- Marinate chopped chicken pieces with 1/2 tbsp sesame oil, 1/2 light soya sauce & 1/4 tsp salt for at least 30mins.
- Heat up oil in wok, add ginger, stir fry till fragrant for 2mins. Add chicken pieces and fry till lightly brown for about 2-3mins. Add wine & soy sauces, mix evenly. Cover & simmer for 10mins till cook through.
- Remove cover, continue to cook till sauce reduce to your liking. Add basil leaves & fry briefly. Dish up.

Hi Mindy, the chinese name is 九层塔,u heard b4? this can be found at cold storage supermarket.
