Vietnamese Garlic Chicken



Ingredient
  • 3 stalks lemongrass, use lowe half
  • 50gm spring onions
  • 2 cm ginger
  • 50gm garlic
  • 500gm chicken fillet
  • 4 tbsp fish sauce
  • 4 tbsp garlic chilli sauce
  • 2 tbsp oil
  • 3 tbsp toasted peanuts, crushed
Method
  1. Put lemongrass, spring onion, ginger & garlic in a blender and chop finely.
  2. Place the mixed spice in a mixing bowl. Add in chicken chunks. Mix in fish sauce & chilli sauce. Marinate overnight.
  3. Heat up oil. Stir fry chicken on high heat till cooked for about 8 mins.
  4. Sprinkle over peanuts & serve.
